Ingredients
- 2 1/2 cups whole milk
- 1 cup yellow cornmeal
- 2 tablespoons unsalted butter
- 3/4 teaspoon salt
- 3/4 teaspoon freshly ground black pepper
- 1 cup frozen whole-kernel corn
- 1/2 cup chopped green onions, plus more for garnish
- 2 teaspoons baking powder
- 2 large eggs, lightly beaten

Steps
- Preheat oven to 350 degrees F (175 degrees C). Lightly coat a 2-quart baking dish with cooking spray.
- Stir together milk, cornmeal, butter, salt, and pepper in a saucepan over medium-high heat. Bring to a boil, stirring constantly, until mixture reaches the consistency of mashed potatoes, about 5 minutes. Remove from heat. Stir in corn, green onions, and baking powder. Stir in eggs. Transfer batter to the prepared dish.
- Bake in the preheated oven until risen and set, about 35 minutes. Serve with sour cream and additional green onions.
